Recipes are written in chef speak.

They assume you know what folding means, which pan to use, and what to do while the dough rests. Most of us don’t.

Also known as fresh coriander, coriander leaves

The green leaves and tender stems of the coriander plant.

Bright and fresh to most people, soap to a few. The few always mention it.

Rated before anything gets hot.

Every guide is graded from 1 to 5. The grade is for the dish, never for you.

Difficulty 3

Pay attention.

One pan, one thing that burns, and you’re standing there for all of it.

  1. 1. Can’t burn it. One pan, nothing that burns in under five minutes, nothing that has to happen at the same time.
  2. 2. You’ll be fine. One pan and one timing that matters. Set the timer and you’re ahead of the recipe.
  3. 3. Pay attention. One pan, one thing that burns, and you’re standing there for all of it.
  4. 4. Hold on to something. Two pans, two timers, and one step that has to land while the other is still going.
  5. 5. Terrifying. Three things on the go, a sauce that splits if you look away, and a step you can’t redo.

Where this goes wrong

Step 6, the onions. Everyone rushes them. They need eight minutes on medium, not the five the recipe says, and they’re ready when the edges go see-through with no browning.
